Abstract

The honeybee is a product very appreciated, but of easy adulteration. For the determination of its quality is necessary to conduct some tests. This study aimed to evaluate the quality of honey (Apis mellifera) produced and marketed in the city of Francisco Beltrão - PR, through physical-chemical, microbiological and labeling of eight samples. All samples tested in accordance with the limits set by law for analysis of ash, acidity and hydroxymethylfurfural (HMF). However, for moisture analysis, four samples showed discordant results. Analyses of fraud, no sample showed signs of addition of sugar, starch or diluents. The microbiological analysis of samples showed no microbial contamination, indicating tampering with hygienic quality of the product. Analyses of mandatory labeling, samples were irregularities regarding the lack of information.
