Abstract

The main dishes of the cuisine of Paraná originated the interaction between the portuguese and indigenous culture, and later was influenced also by french immigrants, germans, italians, ukrainians, poles, austrians, arab, syrian, lebanese and japanese. Many dishes that exist in other cultures were chosen as typical in Paraná where occur several popular festivals, and a tradition in some communities, thereby spreading the wealth of this state. It is extremely important to maintain this culture, therefore, this work presents the different dishes of Paraná, its origins, forms of preparation, to be developed both a qualitative research through interviews recorded on the knowledge of young adults aged 18 to 25 years, patients of a clinic in Cascavel, west of Paraná, on the subject. Therefore the objective of this study was to investigate young adults on their knowledge of the preservation of the gastronomic heritage of Paraná. After the interviews were transcribed faithfully and the results show that there is not much knowledge about this part of the interviewees often unaware parties but some of the typical dishes.
