Nutritional adequacy of elderly nursing homes

Abstract

This study investigated the nutritional adequacy of institutionalized elderly individuals in Florianópolis-SC, analyzing the intake of macro and micronutrients. The sample consisted of 30 elderly participants divided into two groups. Data collection was conducted through a 24-hour dietary recall, analyzed using the Nutrition Decision Support System. Results revealed significant inadequacies, such as excessive sodium (580% above recommendations), iron (80% above), and calcium (55% above), while zinc intake was 52% below recommendations. Vitamins also exceeded recommended levels, particularly vitamins A and E. It was concluded that dietary adjustments are necessary to meet nutritional recommendations and improve the quality of life of these individuals.
